This is a nice alternative for those do not like Fruit Cake. The cake is dense and moist, and I have had many requests for this recipe. This is good served plain or with whipped cream. Ingredients:
1 1/2 cups vegetable oil |
2 eggs |
2 cups sugar |
1 teaspoon vanilla |
1 teaspoon cinnamon |
1/2 teaspoon clove |
1/2 teaspoon nutmeg |
1/2 teaspoon salt |
1 1/2 teaspoons baking soda |
3 cups flour |
1 1/2 cups golden raisins |
3 cups fresh apples, chopped |
1 cup nuts, chopped |
Directions:
1. Beat together oil, eggs, and sugar thoroughly. Add vanilla. 2. Sift dry ingredients together three times. Add to oil and sugar mixture. 3. Add apples, raisins, and nuts. 4. Bake in greased and floured tube pan for 1-1/2 hours or until cake tests done at 325. |
