This is my guilt-free not-to-sweet treat; It is quick and easy in the microwave. I came up with this after falling in love with those new Quaker Oatmeal Breakfast Cookies in apple cinnamon flavor and after eating entirely too many I decided to come up with my own apple induced oatmeal. This makes for a thick oatmeal. Use more soymilk for a thinner oatmeal. Ingredients:
1 granny smith apple (peeled and cubed) |
1 tablespoon lemon juice |
1/4 teaspoon ground cinnamon |
1 small banana, sliced |
1 tablespoon walnuts, chopped (optional) |
1/2 cup quick oats |
1 cup vanilla-flavored soymilk (i use 8th continent light vanilla) |
1/4 teaspoon ground cinnamon |
Directions:
1. Mix cubed apple with lemon juice and 1/4 tsp cinnamon, making sure apple is covered evenly. 2. Cover, and microwave on high for 3 minutes. 3. Remove from microwave and add sliced banana. 4. Put aside. 5. In separate bowl combine oatmeal, soymilk, and the other 1/4 tsp cinnamon. 6. Mix well and microwave on high for 3 minutes. 7. Combine apple, banana mixture with oatmeal. Add chopped walnuts. 8. Enjoy. |
