1 1/2 cups flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
1/4 cup unsweetened applesauce |
1/4 cup brown sugar |
1/2 cup white sugar |
1 egg |
2 bananas, smashed |
1 tsp vanilla |
1 tsp cinnamon |
1 apple, peeled and chopped |
Directions:
1. Preheat oven to 375F and grease an 8×4″ loaf pan. 2. Beat egg and sugars. Add in bananas, vanilla and melted butter and mix well. 3. Stir in dry ingredients, chopped apple, and cinnamon, until just combined. 4. Pour batter into pan and bake for 35-40 minutes, until tester has a few crumbs, but no batter, clinging to it. 5. Cool in pan for 10 minutes, then transfer to wire rack. Wrapped well, this should keep for several days. Makes 1 loaf. |
