This is a wonderfully tasty green salad that becomes super-delicious with a combination of bacon and apples. So good for you and tastes so good! Ingredients:
1/2 pound seedless red grapes |
6 strips of bacon |
1 large granny smith apple |
1/2 celery stalk |
1 cup shredded mix of asiago, romano, and parmesan cheeses (kraft does a great combination of these) |
1/2 cup plus 1tb apple cider vinegar |
2tb olive oil |
1 large bunch baby spinach |
1 medium bunch watercress |
Directions:
1. Fry up the bacon until browned. 2. Meanwhile, pour 1/2 cup apple cider vinegar into medium-sized bowl. 3. Halve the grape, dice the apple, and chop the celery. 4. Put the above vegetables/fruits into the bowl of vinegar: swirl around so that all the surfaces get covered. 5. Mix the watercress and spinach in a large salad bowl. 6. Add the grapes, apple, and celery, being careful to siphon off the unused vinegar. 7. Crumble the bacon on top. 8. Add the 1 cup shredded cheeses. 9. Whisk together the remaining 1tb apple cider vinegar and the 2tb olive oil. Add pepper and salt to taste (I recommend using a pepper grinder). 10. Toss the salad with the dressing. 11. Serve. |
