Apple Bacon Pancake Pie

Tasty treat for breakfast or brunch. From the Ontario Milk Marketing Board.
Ingredients:
1 tablespoon butter
1 onion, sliced
1/2 lb bacon, sliced
2 pears, peeled and sliced
2 apples, peeled and sliced
1/2 teaspoon thyme
3/4 cup flour
1 cup milk
2 eggs, beaten
1/2 teaspoon salt
Directions:
1. Heat butter in a large frying pan.
2. Add onion and bacon and cook until softened.
3. Stir in pears, apples and thyme, and cook until heated through.
4. Place flour in a small bowl.
5. Add eggs and remaining milk and beat until smooth.
6. Whisk in salt.
7. Spread fruit over bottom of a 9x13-inch baking pan.
8. Pour batter on top.
9. Bake in 350°F oven for 30 minutes until puffed and lightly browned.
10. Cut in squares and serve with warmed maple syrup.
