Apple Bacon Dill Potato Salad |

I was planning a BBQ and thinking about my absolute ideal potato salad. This is what I came up with. It's got a little kick to it with this homemade Mayonnaise because of the cayenne pepper. Read more . If you use store-bought mayo, I'd recommend adding the cayenne because it really adds something. And the apple and bacon give it some texture. I usually hate potato salad because it's kind of mushy and that makes me a little icked out when it's cold for some reason so the crunchy/chewy stuff is appealing to me. Ingredients:
4lbs white potatoes |
1 apple, diced fine |
1.5 tsp fresh dill, chopped |
1/4c or so of crumbled bacon |
1/2-3/4c mayo (i used homemade mayo recipe linked in intro) |
1/4 tsp cayenne if using store-bought mayo |
salt to taste. you could also add pepper but i hate black pepper so i didn't. |
Directions:
1. Cube potatoes and boil until fork-tender 2. While potatoes are boiling, mix apple, dill, bacon, mayo, cayenne, and salt and pepper in a bowl 3. Toss potatoes in mayo mixture 4. Chill for at least 2 hours, but overnight is best for flavor-melding |
