Apple, Apricot and Raisin Muffins |

This is maybe from an old American magazine but I am not sure as it was in a box and on a scrap of paper. Ingredients:
2 cups bran flakes |
1 1/2 cups milk |
2 eggs, lightly beaten |
1/2 cup vegetable oil |
2 cups plain flour |
1/2 cup sugar |
2 tablespoons baking powder |
1/2 teaspoon salt |
1 tablespoon cinnamon |
1 apple, peeled, diced |
1/2 cup dried apricot, diced |
1/2 cup raisins |
Directions:
1. Soak bran flakes in milk for 5 minutes in large bowl. 2. Add eggs and oil, combine well. 3. Sift all dry ingredients into the bowl and mix well. 4. Stir in apples, apricots and raisins. 5. Divide batter in 18 well greased 1/3 cup muffin tins. 6. Bake at 375 F for 18 - 20 minutes or till tester comes out clean. 7. Turn out onto wire racks. |
