Apple And Rhubarb Crumble |

A sweet fruit crumble with stewed rhubarb and apple filling Ingredients:
2 cups diced rhubarb |
2 apples, peeled and quartered |
2 tblsp sugar |
1/2 cup water |
1/2 cup plain flour |
1/3 cup brown sugar |
1/2 cup desiccated coconut |
1/4 cup rolled oats |
2 oz butter, melted |
1/4 tsp cinnamon |
Directions:
1. Pre-heat oven to moderate (180C) 2. Chop rhubarb and apples and add to sugar and water in saucepan, cover and simmer for 10 minutes or until soft. 3. Melt butter, add dry ingredients and mix until even. 4. Lay stewed fruit in a cassarole dish and cover with oat crumble mixture. Bake for 15-20 minutes or till golden brown. 5. Serve hot with cream or ice-cream |
