Ingredients:
1/4 cup low-fat buttermilk |
1/4 cup fat-free sour cream |
1/2 teaspoon sugar |
1/4 teaspoon salt |
dash of ground red pepper |
2 cups coarsely shredded peeled parsnips |
1 1/2 cups coarsely shredded red delicious apple |
2 tablespoons sliced green onions |
Directions:
1. Combine first 5 ingredients in a bowl. Stir well; set aside. 2. Combine parsnips, apple, and green onions in a bowl; toss well. Add buttermilk mixture; toss gently. Serve chilled or at room temperature. |
