Ingredients:
1/4 cup low-fat buttermilk
1/4 cup fat-free sour cream
1/2 teaspoon sugar
1/4 teaspoon salt
dash of ground red pepper
2 cups coarsely shredded peeled parsnips
1 1/2 cups coarsely shredded red delicious apple
2 tablespoons sliced green onions
Directions:
1. Combine first 5 ingredients in a bowl. Stir well; set aside.
2. Combine parsnips, apple, and green onions in a bowl; toss well. Add buttermilk mixture; toss gently. Serve chilled or at room temperature.
