Apple and Onion Pork Chops

Boneless pork chops are skillet cooked with chopped apples, sliced onions, and sauteed in apple cider. Fresh sage gives it all an extra boost of savory flavor!
Ingredients:
4 boneless pork chops, a half-inch-thick
1 tablespoon fresh sage, chopped
1 tablespoon olive oil
1 large red onion, cut into wedges
1 granny smith apple, chopped into 1/2-inch pieces
3/4 cup apple cider
salt
pepper
Directions:
1. Rub both sides of the pork chops with the sage, and salt and pepper to taste.
2. Heat a large skillet over high heat, then add 1 teaspoon olive oil; sear chops until golden on both sides; about 3 minutes per side.
3. Remove chops and set aside. Wipe out skillet and add the remaining 2 teaspoons olive oil. Add the onion and apples and cook over medium-high heat until lightly browned, about 5 minutes. Season with salt and pepper and stir in cider.
4. Return chops to skillet. Cover and cook, turning once, until just cooked through - about 6 minutes.
