Apple and Honey Glazed Baby Carrots |

A great simple side dish that's good any time of year. The liquid is cooked down to a flavorful glaze that tastes great on pork chops or ham. endless possibilities! The carrots should be partially steamed or 'cooked' so they are tender but still firm. Ingredients:
4 tablespoons butter |
2 lbs baby carrots, partially steamed |
1 1/2 cups apple juice or 1 1/2 cups apple cider |
1/4 cup honey |
1/2 teaspoon chopped fresh dill |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
Directions:
1. Melt butter in a large nonstick skillet over medium-high heat. Add carrots to the skillet and simmer about 2-3 minutes. 2. Add apple juice, honey, and dill. Bring to a boil. Reduce the heat and simmer about 15 minutes or until carrots are tender and liquid is reduced to a glaze, stirring occasionally. Season to taste with salt and pepper. |
