I concoted this vegetarian salad for Thanksgiving. Went wonderful complimenting the savory dishes with its sweet apple, anise, and crispy texture. Great as a salad or vege/fruit side dish too. Healthy as well as delcious. Read more . Makes me wonder why I don't buy fennel more often! Ingredients:
1 large fennel bulb, stems and leaves |
1 to 2 large red skinned crisp sweet apples |
chopped walnuts as desired |
light olive oil to moisten |
honey to taste |
salt and pepper |
Directions:
1. Cut off root part of fennel, chop the bulb and stems finely ( I used food processor ) reserve the fringy leaves 2. chop the apple in the same consistency 3. Mix apple and fennel together with some chooped walnuts 4. Moisten all with olive oil 5. Sweeten with honey 6. salt and ppper to taste 7. Best serve the first one to 2 days, after that still great but loses some crispness 8. Place in bowl and garish with fennel fronds 9. Serve well chilled |
