Apple and Dried Fruit Compote |

This recipe was found in Woman's Day. It's a nice accompaniment to pork loin. Ingredients:
2 teaspoons canola oil |
1 medium onion, sliced |
1 large granny smith apple, cored and peeled, cut in 1-inch pieces |
1 cup dried apricot |
1 cup dried prune |
1/2 cup craisins or 1/2 cup raisins |
1 3/4 cups apple juice or 1 3/4 cups cider |
1 teaspoon cider vinegar |
1/4 teaspoon pepper |
Directions:
1. Heat oil in skillet over medium high heat. Add onion, saute 3 minutes or until just translucent. Add apple; saute 2 minutes or until golden. 2. Add remaining ingredients and cover. Reduce heat and simmer 5 minutes or until apples are tender. Serve warm or chilled. |
