Apple And Blue Cheese Salad

I can eat this every day with a piece of salmon and be perfectly content! 2007 Family Circle.
Ingredients:
2 tbs. sherry-wine vinegar
1 tbs. fresh-squeezed lemon jucie
1 tbs. honey
1/4 tsp. salt
1/4 tsp. black pepper
1/3 cup extra-virgin oilive oil
10 cups mixed salad greens
4 ounces hard blue cheese, crumbled
3 large red delicious, gala or cortland apples, cored and cut into 3/4-inch cubes
2 ribs celery, sliced
1/2 red onion, sliced
Directions:
1. In medium-size bowl, whisk together vinegar, lemon juice, honey, salt and pepper.
2. Gradually drizzle in olive oil while whisking until thick and well blended.
3. In large bowl, toss together the salad greens, blue cheese, apples, celery and onion until well mixed. (I also like to toss in walnut pieces.)
4. Drizzle dressing over top of salad; toss to evenly coat ingredients.
5. If desired sprinkle with extra cheese.
6. Serve immediately.
