Apple And Blackberry Cake |

1 1/2 cups flour |
2 tsp baking powder |
1/2 tsp salt |
1/4 tsp cinnamon |
6 tbs butter plus 2 more tbs |
3/4 cup packed brown sugar plus 2 more tbs |
1/2 cup milk |
2 eggs |
4 small apples , peeled cut into wedges |
1 cup fresh blackberries |
Directions:
1. Combine the dry ingredients except the sugar 2. Melt 6 Tbs butter and mix into the milk and brown sugar and then add the beaten eggs. 3. Spread mixture into a 9 inch round cake pan dusted with sugar 4. Layer on the apples ( press gently over batter ) and sprinkle berries over the apples 5. Combine the 2 Tbs brown sugar with the cinnamon and sprinkle over the berries 6. Dot with the remaining 2 Tbs butter 7. Bake in a 375F oven about 55 minutes or tested done ( and apples are tender ) 8. Serve warm or room temperature with whipped cream |
