Appetizer Al Fresco Frittata |

Yummo Ingredients:
2 cups fresh sliced mushrooms |
1 cup chopped white onion |
1 teaspoon butter |
4 cups chopped fresh spinach |
4 eggs beaten |
1 cup ricotta cheese |
1/2 cup evaporated milk |
2 tablespoons flour |
1 tablespoon dijon mustard |
1/2 teaspoon salt |
1/2 teaspoon herb pepper seasoning |
1/4 teaspoon nutmeg |
1 tomato sliced |
1/3 cup toasted sliced almonds |
1/3 cup shredded cheddar cheese |
Directions:
1. Saute mushrooms and onions in butter then stir in spinach and cook just until limp. 2. Set aside. 3. Blend eggs with ricotta cheese, milk, flour, mustard, salt, pepper and nutmeg then mix well. 4. Stir in vegetable mixture. 5. Pour into deep quiche pan and bake at 350 for 20 minutes. 6. Top with tomato slices, almonds and cheese. Return to oven and bake 10 minutes longer. 7. Serve warm or cold. |
