Variations Paniyaram or Plain hoppers are bowl-shaped thin pancakes made from fermented rice flour. They derive their shape from the small vessel in which they are cooked. They are fairly bland, and always served with a spicy condiment. Read more . These hoppers are made from a batter using rice, yeast, salt and a little sugar. After the mixture has stood for a couple of hours, it can be fried in the appachatti with a little oil. This can be served with coconut milk and sugar (widely in northern Tamil Nadu). In south-central Kerala, it is mostly served with Kadala(Chickpea) curry mutton or vegetable stew or egg roast. Ingredients:

• 1/2 cup cooked rice |
• 250gm raw rice |
• 1/2 coconut (grated) |
• 1-1/2 cup water(add water till the batter is in a creamy flowing consistency) |
• 3 tsp sugar |
• 1/2 tsp yeast |
• salt to taste |
Directions:
1. How to make Appam: 2. • Soak raw rice for about 4 hours and drain. 3. • Blend with cooked rice and grated coconut in a mixie. 4. • Mix sugar, yeast and salt in lukewarm water(If water is toohot yeast will die). Leave it for half an hour. 5. • Add this mixture to the above grinded mixture. 6. • Leave the mixture for fermentation for 8 hours. 7. • Spread this fermented mixture (1 ladle)in a non-stick pan. 8. • Put a lid on the pan and heat it for 2 minutes. 9. • Appam is ready. Serve it with potato curry. |
