Apigigi Tapioca Pudding Tamles |

I love this dessert. It's out of the ordinary tapioca dessert. Reminds you of a Japanese rice cake (mochi), but not a bean flavor - tapioca. Ingredients:
2 cups tapioca, wheat flour, cornstarch or arrowroot |
1/2 cup sugar |
1/2 cup coconut milk(canned/the sweetened kind) |
banana leaves (people have been known to use corn husks) |
Directions:
1. Mix the flour, sugar and coconut milk into a dough and form it into 1 inch wide, 1/2 inch deep and about 4 inches long and wrap it in banana leaves. You can use string to tie the wrapped dough.Cook the wrapped peices in boiling water for about 25 minutes. Pat each peice dry and serve cold or hot. You can also freeze the apigigi and re-warm it by steaming it. |
