My daughter just made this with a friend for a sleepover treat. They came up with the name by opening my Greek Mythology book and blindly picking a character. Smooth, Cool and Creamy it makes a good summer treat that even 13 year olds can make-with a little help :) Ingredients:
1/2 c cold butter |
1 c flour |
2/3 c chopped dry-roasted peanuts |
8 oz. package cream cheese, softened |
1 c powdered sugar |
1/3 c peanut butter |
1 8oz. carton whipped topping thawed and divided |
2 3/4 c cold milk |
2.1 oz. package instant chocolate pudding |
2.1 oz. package instant vanilla pudding |
shaved chocolate and 2 -3 t. additional chopped peanuts for topping decoration |
Directions:
1. In a bowl, cut butter into flour until crumbly. 2. Stir in peanuts. 3. Press into an ungreased 13 x 9 inch pan. 4. Bake at 350 for 16 - 20 minutes. 5. Cool. 6. In a mixing bowl, beat cream cheese, powdered sugar and peanut butter until smooth. 7. Fold in 1 & 1/2 C whipped topping. 8. Carefully spread over the cooled crust. 9. In another bowl, whisk the milk and puddings together. 10. Let stand to thicken for about 2 minutes. 11. Spread over cream cheese layer. 12. Top with remaining whipped topping. 13. Garnish with chocolate shavings and more peanuts if desired. 14. Refrigerate until serving. |
