Aoife's Roast Pumkin Soup

roast vegetable and pumpkin soup
Ingredients:
300 g carrot
450 g sweet potato
500 g pumpkin
200 g celery
125 g vegetable stock cube
150 g low fat creme fraiche
1 1/2 l water
160 g chopped onions
2 cloves garlic
Directions:
1. chop the root vegetable and roast in the oven
2. add a little oil to a large saucepan and brown the roughly chopped onion, garlic and a chopped red chilli if desired in a pan
3. dissolve the stock cube in boiling water and add to the saucepan with the rest of the water. Bring to the boil.
4. add the roasted vegetables and simmer for 20 - 30 minutes until the vegetables are soft.
5. remove from the heat and blitz until well pureed. stir in the low fat creme fraiche and add salt and pepper to taste
