This recipe has been in our family since I was a girl,it's a favorite of every household here Down Under . My Mother made them and my grandmother too! It was a favorite with the armed forces in first world war that is why they are called Anzac Biscuits. Everyone has a different version, with added ingredients or omitting some ingredients. Ingredients:
1 cup quick-cooking rolled oats |
3/4 cup coconut |
1 cup flour |
1 teaspoon bicarbonate of soda |
1 cup sugar |
1/2 cup butter |
1 tablespoon golden syrup |
2 tablespoons boiling water |
Directions:
1. Mix oats, flour, sugar and coconut together. 2. Mix soda with boiling water and add to melted butter and syrup. 3. Add to dry ingredients. 4. Place 1 tablespoon of mixture on a greased tray. 5. Bake in slow oven for 20 minutes at 160°C. |
