These are traditional Australian oat biscuits and until I found this recipe and made them recently, I had forgotten just how delicious they were. Ingredients:
1/2 cup butter |
1 tablespoon golden syrup or 1 tablespoon honey |
1/2 teaspoon bicarbonate of soda |
2 tablespoons boiling water |
1 cup rolled oats (not instant) |
1 cup coconut |
1 cup plain flour |
1 cup brown sugar (can use white) |
Directions:
1. Combine dry ingredients (oats, coconut, flour and sugar) in a large bowl and mix well. 2. Melt butter and golden syrup/honey over low heat. 3. Add bicarbonate soda to the boiling water and pour into butter mixture. 4. Pour wet ingredients over the dry ingredients and mix to a firm and moist consistency. 5. Drop teaspoonfuls onto a cold greased tray or one lined with baking paper. 6. Cook for 15 min at 180 Celsius. 7. Cool on wire rack. |
