I made this this morning and enjoyed it so much I just had to share. It's very simple and diabetic friendly. I have a single cup brewer that I love but you may make a big pot full and serve as many as you like. Time given is for a single cup coffee maker. Ingredients:
10 ounces fresh brewed coffee |
3 inches cinnamon sticks |
4 drops peppermint extract (you might want to start with less and add if you like) |
splenda sugar substitute (or sugar) |
fat-free evaporated milk (optional) |
Directions:
1. Brew the coffee. 2. Drop the cinnamon stick into the cup. 3. Add coffee, peppermint extract and Splenda. 4. Add milk if using. 5. Stir and enjoy. |
