Any Weather Cauliflower Soup |

I make this one in all types of weather, hot or cold. It's simple and flavorful, one of my favorite soups and makes a great quick meal. Ingredients:
3 tbsp. oil |
1 onion |
t tsp dill |
1 head of sliced cauliflower |
6 cups water |
5 cups potatoes, diced |
3 bay leaves |
1/2 tsp tamari |
salt and pepper to taste |
1 cup corn |
Directions:
1. Saute oil, onion and dill till onions are clear. 2. Add the sliced cauliflower and saute for 5 minutes more. 3. Add the water and the potatoes, cover pot and simmer for 30 minutes. 4. Puree 4 cups of this mixture. ( I simply put my stick mixer into the pot of soup and roughly mix it, leaving lots and lots of chunks) 5. Add 3 bay leaves, the tamari, salt, pepper and corn. 6. Simmer an additional 25 minutes. |
