I found this as a Liliko‘i (passion fruit) recipe that suggested lemon is no Liliko'i was available. Then I realized it would work for ANY fruit juice. So use this as a good base recipe and go from there. Ingredients:
3/4 cup butter |
2 cups sugar |
4 eggs |
3 cups all-purpose flour |
2 teaspoons baking powder |
2/3 cup fruit juice |
1/3 cup milk |
Directions:
1. Cream butter and sugar together. Beat in eggs, one at a time. 2. Mix flour and baking powder together. 3. Add dry ingredients and liquid ingredients to the sugar mixture until well blended. 4. Pour batter into two silicone (greased) loaf pans and bake at 350F for 45-50 minutes. 5. You can use oat flour for this recipe, too, but it’s a bit more crumbly. |
