You can eat this on its own or stuffed in a bun or wrap. It is delicious!!! From the 2010 MILK calendar. Ingredients:
1/2 cup plain yogurt |
1/3 cup mayonaise |
1/4 cup chopped basil |
1/4 tsp pepper |
1/2 an english cucumber |
1 bell pepper |
2 cups cherry tomatoes; halved |
1 1/2 cups bocconcini pearls |
1/2 cup green olives with pimento |
2 tbsp drained & chopped pickled hot peppers |
2 cans chunk tuna, drained |
salad greens |
Directions:
1. In a large bowl, combine yogurt, mayonaise, basil and pepper 2. Mix thoroughly 3. Add cucumber, bell pepper, tomatoes, boccconcini, olives and hot peppers. 4. Toss to coat. 5. Using a fork gently stir in Tuna, breaking chunks slightly, leaving tuna in bitesize pieces. 6. Serve on top of greens |
