I try introducing my kids to new foods a lot. They love olives, so I thought we'd try an antipasto salad and they loved it. I couldn't be more thrilled. Ingredients:
1 head of romaine |
1 bag of field greens |
pepperocini |
banana peppers |
greek olives |
red onions |
spanish queen olives with pimento |
red grapes (in place of tomato to offset the spicy and sour) |
sliced hard salami |
sliced ham |
sliced turkey |
feta cheese |
greek vinaigrette dressing (or vinaigrette of choice) |
Directions:
1. Chop romaine and mix with field greens. 2. Slice onions, choosing larger circles for presentation. 3. Dice green olives, leaving some whole. 4. Crumble feta. 5. Make rolls with the meat and chop into 1/2 inch slices/spirals. 6. Toss dressing with greens and pay on platter. 7. Place onions, olives, peppers, and the meat rolls on top, making sure some of everything will be in each serving taken. 8. Place red grapes in the center. 9. Sprinkle crumbled feta over the top. |
