A restaurant I occasionally stop at had several sides you could choose from to go with your sandwich. Their antipasto salad is my favorite. This restaurant is 50 miles from where I live. I decided to make my own. It is for my grandkids, Nolan and Madelyn Ingredients:
3 lbs roma tomatoes (fresh and diced) |
1 large red onion, thinly sliced |
14 ounces quartered artichoke hearts, drained |
3 7/8 ounces sliced black olives |
1/2 lb cubed ham |
1/2 lb cubed turkey |
1/4 lb thick sliced and finely diced genoa salami |
12 ounces of zesty italian salad dressing roasted garlic italian vinaigrette dressing |
1 (3/8 ounce) package good seasons italian dressing (dry mix) |
16 ounces mild pepper rings, with juice |
garnish with feta cheese |
Directions:
1. Mix together in stainless steel bowl. Store any leftovers in refrigerator. |
