Antipasto Pasta Salad

This dish is easy to make and very tasty. It can be served as a side dish but makes a perfect lunch. Serve as a side for grilled chicken!
Ingredients:
1 (12 oz) package tri-color rotini
1 (8 oz) part-skim mozzarella cheese
1 (8oz) hormel pepperoni
1/2 red pepper cut into strips
2 cups chopped broccoli
italian dressing
salt and pepper to suit your taste
Directions:
1. Prepare pasta according to package cooking until al dente (approximately 9 minutes) adding chopped broccoli during last two minutes.
2. While pasta is boiling cut the pepperoni in half length-wise and then slice
3. Dice the mozzarella cheese
4. Cut red pepper into thin strips
5. Drain pasta and broccoli, rinse with cold water and drain again
6. Toss together pepperoni, mozzarella cheese, red pepper, and pasta with chopped broccoli in large bowl.
7. Pour about 1/2 cup of dressing and toss. You may add more or less dressing to suit your taste.
8. Season with salt and pepper to taste.
9. Refrigerate until ready to serve.
