These granola bars are excellent for breakfast or an anytime snack. I love the cherries in these, but you could use any kind of dried fruit you want, mix up the seeds (I use all sunflower if that's all I have, I also like to add flax seeds if I have them), or even add chocolate chips. They are not too sweet and super additctive. Ingredients:
2 1/2 cups oats (not instant oatmeal) |
1 cup shredded coconut |
1 cup dried cherries, chopped |
1 cup seeds (sunflower, pumpkin, sesame, flax, i use a mix) |
1 cup raw peanuts |
1 (14 ounce) can fat-free sweetened condensed milk |
Directions:
1. Heat oven to 250 F and use a non-stick cooking spray to prepare an 9x13 or 8x10 pan. I prefer the 8x10 since it makes thicker bars, but use what you've got. Make sure to get the sides, too. 2. Heat the milk on the stove till warm. 3. Combine the oats, seeds, nuts, fruit and coconut in a large bowl. 4. Pour the milk over the oat mixture and use a spatula to mix it all together. It will be pretty thick. 5. Press the mixture into the pan and bake for 1 hour. 6. Remove from oven and let cool for 15 minutes Slice into bars. I like to let the bars cool on wax paper. Make sure they are totally cooled before storing. |
