Red Pear, Black Grape, Spiced Pecan, Pomegranate Salad
Ingredients:
1 pomegranate, seeded
3/4 cup balsamic vinegar (aged)
24 grapes, halved
1/4 cup olive oil
1 red onion, thinly sliced rings
2 tbsp. brown sugar
1/4 cup crumbled blue cheese
1/8 tsp salt
1/8 tsp pepper
2 pears, cored & 4 inch slices
1 lb red leaf lettuce, or baby spinach
1/8 tsp orange zest
3/4 cup pecans
1 tbsp brown sugar, packed
1 tbsp butter, melted
2 tsp hot sauce
1/4 tsp salt
1/4 tsp black pepper
Directions:
1. Make pecans (mix pecans, brown sugar, butter, salt, pepper, and cholula; toast 10 min at 350, stirring once); set aside.
2. Blend first 4 ingredients in a small saucepan and stir over medium heat until sugar dissolves; set aside dressing.
3. Divide torn/cut greens among 8 salad plates. Over the greens divide and scatter pomegranate seeds, grape halves, red onion rings & blue cheese crumbles.
4. Quarter pears, core and slice each into 4 slices-for each salad, speckle with pecans, and drizzle with reserved dressing. Dust top of each salad with orange zest.
