Red Pear, Black Grape, Spiced Pecan, Pomegranate Salad Ingredients:
1 pomegranate, seeded |
3/4 cup balsamic vinegar (aged) |
24 grapes, halved |
1/4 cup olive oil |
1 red onion, thinly sliced rings |
2 tbsp. brown sugar |
1/4 cup crumbled blue cheese |
1/8 tsp salt |
1/8 tsp pepper |
2 pears, cored & 4 inch slices |
1 lb red leaf lettuce, or baby spinach |
1/8 tsp orange zest |
3/4 cup pecans |
1 tbsp brown sugar, packed |
1 tbsp butter, melted |
2 tsp hot sauce |
1/4 tsp salt |
1/4 tsp black pepper |
Directions:
1. Make pecans (mix pecans, brown sugar, butter, salt, pepper, and cholula; toast 10 min at 350, stirring once); set aside. 2. Blend first 4 ingredients in a small saucepan and stir over medium heat until sugar dissolves; set aside dressing. 3. Divide torn/cut greens among 8 salad plates. Over the greens divide and scatter pomegranate seeds, grape halves, red onion rings & blue cheese crumbles. 4. Quarter pears, core and slice each into 4 slices-for each salad, speckle with pecans, and drizzle with reserved dressing. Dust top of each salad with orange zest. |
