Tilapia Parmesan is not my creation, by any stretch of the imagination, but this is my version. We love this simple, quick dish and can whip it up for a quick dinner for one or for an impromptu gathering! Ingredients:
2lb tilapia fillets |
1/2 stick butter, softened |
1/4 cup mayonnaise |
1t dijon mustard |
1/2 freshly grated parmesan cheese |
1t old bay seasoning |
juice from 1/2 lemon |
fresh dill |
Directions:
1. Combine butter, mayo, mustard, Old Bay, dill, a squirt of lemon juice and cheese in bowl. 2. On broiler safe pan(I use cast iron) well greased or lined with foil, place fish fillets in single layer. 3. Broil for about 3 minutes. 4. Remove from oven, flip fish and top with cheese mixture. 5. Return to broiler and cook another 3-4 minutes until fish flakes easily and topping is lightly browned. 6. Top with another squirt of lemon juice prior to serving. |
