I found this one a few years ago, and I think that it is the best. Ingredients:
1 cup yellow cornmeal |
1/2 cup flour |
1 cup buttermilk |
1/2 cup sweet milk |
1 egg, beaten |
1/4 cup butter, melted |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 tablespoon baking powder |
1 teaspoon sugar |
Directions:
1. Mix all dry ingredients. 2. Form a well in the center of dry ingredients and add wet ingredients. 3. Mix together until everything is just mixed. 4. Do not over-mix, especially if you are using a mixer. 5. Can be baked using a hot greased 10 cast iron skillet or a greased loaf pan. 6. Bake at 350 F for 25 to 30 minutes or until top is golden brown. 7. Cooking times may vary. |
