After 40 years of trying new squash recipes, this is the only way I get my husband to eat it. And..... he likes it!
Ingredients:
2 eggs, beaten
1 cup milk
3 teaspoons melted butter
salt and pepper
1 can chopped green chili
2 cups cooked squash, mashed
1 cup crushed tortilla chips
Directions:
1. Beat together eggs, milk, butter, salt and pepper.
2. Add squash and then chiles.
3. Top with crushed tortilla chips.
4. Bake at 350 degrees for 30 minutes, or until set.
