Yummy recipe from my friend's mother. Recipe amounts are somewhat flexible. The cooking time shown is for hamburgers. I don't have a specific baking time for the meatloaf, because I usually make this as hamburgers. A flatter meatloaf needs less baking time than a taller one. Ingredients:
1 1/2-2 lbs ground beef (angus 15% fat) |
1/2 cup onion, coarsely chopped (red or yellow onions) |
2 eggs |
1/4 cup chopped celery (or half celery and half carrot) (optional) |
1/3 cup ketchup (trader joe's organic) |
3 tablespoons ketchup (for top of meatloaf) (optional) |
1/2 cup breadcrumbs, any kind even if not very dry (try low-carb bread) |
garlic salt, pepper |
Directions:
1. For meatloaf:. 2. Mix everything together. 3. Pat into an ungreased baking dish about 2” deep. (No greasing needed if meat used is 15% fat.) Pour additional dabs of ketchup on top. 4. If using a loaf pan, make a groove along the top of the meat and pour ketchup into the groove. 5. Bake at 350 degrees. A flatter meatloaf needs less baking time than a tall one. 6. For hamburgers:. 7. Use just a bit of bread crumbs or eliminate entirely; pan broil. |
