Anna's Bountiful Banana Cake |

This cake is very good- it is moist and delicious! We call it bountiful because it has so many things in it that is great for you. It is similar to banana bread. The flaxseed adds a delcious, slightly nutty hint of flavor. Enjoy! Ingredients:
1/4 cup milled flax seed |
3/4 cup whole wheat graham flour |
3/4 cup all-purpose flour |
1/2 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 egg, beaten |
1 cup ripe banana, mashed |
3/4 cup blueberries (optional) |
3 tablespoons vegetable oil |
1/2 cup milk |
1/2 cup chopped nuts |
Directions:
1. Preheat oven to 400°F. 2. Blend dry ingredients together in a bowl. In a seperate bowl; combine egg, banana, milk, and vegetable oil. Add dry ingredients to egg mixture and stir until just blended. Fold in nuts and blueberries. Batter will be slightly thick. Pour batter into a greased 9x13 pan. Sprinkle a little sugar over top, if desired. Bake for 18-20 min., or until top springs back when touched. |
