For a nutritious dessert parfait, layer granola with fresh berries and low fat yogurt. I have not tried this granola. I'm posting this for safe keeping. I found this recipe in Scholastic Parent & Child. Ingredients:
2 cups quick-cooking oats |
1/2 cup coarsely chopped pecans |
1/4 cup unsweetened flaked coconut |
1/4 teaspoon salt |
1/4 cup packed light brown sugar |
2 tablespoons canola oil |
1/4 cup maple syrup |
1/2 cup raisins |
Directions:
1. Preheat the oven to 300. 2. Put the oats, pecans, coconut, salt, and brown sugar in a large bowl and mix with a wooden spoon. 3. Whisk the oil and maple syrup together in a small bowl. Pour over the oats and mix well. 4. Spread out on a lightly oiled baking sheet and bake in the center of the oven for 40-45 minutes, stirring every 10 minutes. 5. Transfer to a bowl, stir in the raisins, and let cool. |
