I like to make these without baking them a second time - this gives you a soft, moist cookie. They are delicious either way. Be careful not to let the ovals brown. Ingredients:
3 eggs |
3/4 cup shortening |
1 cup sugar |
1/4 cup milk |
1 tablespoon anise extract (or 1/4 teaspoon of anise oil, i get mine online from the king arthur flour) |
3 1/4 cups flour |
3 teaspoons baking powder |
Directions:
1. Beat eggs, shortening, and sugar. 2. Alternately add the milk and anise extract and the flour and baking powder to the egg mixture. 3. Divide the batter into 3 mounds on a cookie sheet. (or 4 mounds on 2 sheets to make smaller cookies). 4. With floured hands shape each mound into an oval. 5. Bake 12-15 minutes at 375 degrees. 6. Once baked you can slice the cookies, return to the cookie sheet separating each cookie, and bake for another 7-10 minutes to crisp. |
