The name for biscotti comes from the Italian words bis (twice) and cotti (cooked). We say it's Twice cooked! Twice delicious! Ingredients:
1 cup butter (softened) |
1 cup granulated sugar |
3 eggs |
2 teaspoons vanilla extract |
3 1/2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
3 tablespoons anise seed |
Directions:
1. Preheat oven to 350°F. 2. In mixing bowl, cream butter and sugar. 3. Add eggs one at a time, beating well after each addition. 4. Add vanilla. 5. While mixing, gradually add flour, baking powder, and anise seed. 6. Divide dough into thirds. 7. Shape into three 12-inch long logs. 8. Transfer logs to greased baking sheets and flatten log to 1-inch thickness. 9. Bake 30 minutes or until light brown and firm to touch. 10. Cool logs on wire rack 5 minutes 11. Transfer logs to cutting board. 12. Using a sharp serrated knife, cut logs diagonally into 3/4-inch thick slices. 13. Place slices (flat side down) in single layer on ungreased baking sheets. 14. Bake 10 to 13 minutes or until crisp and golden brown. 15. Cool on baking sheets. 16. ENJOY!!!!! |
