Animal crackers in the pie crust of a creamy dreamy coconut pie. Enjoy! Ingredients:
1 2/3 cups crushed animal crackers(about 60 crackers) |
5 tablespoons butter, melted |
1 tablespoon honey |
1 tablespoon granulated sugar |
1/4 cup cornstarch |
1 can (about 12 oz) sweetened coconut water |
3 tablespoons sweetened flaked coconut |
1 teaspoon coconut extract |
1 container (8oz) frozen whipped topping, thawed |
grated lime rind, for garnish |
Directions:
1. Heat oven to 425 degrees F 2. Stir together crackers, melted butter, honey in a bowl 3. Press crumb mixture evenly over bottom & sides of a 10-inch round pie pan. 4. Bake crust in 425 degree oven for 10 - 12 minutes or until slightly golden around edges. Remove from pan to wire rack to cool 5. Mix sugar and cornstarch in sauce pan. Stir in coconut water and coconut. 6. Cook over medium heat until thick & bubbly - 8 minutes. Add extract 7. Let cool to room temperature, about 15 minutes. 8. Once cooled, fold in whipped topping. 9. Spred filling evenly in prepared pie shell 10. Freeze 4 hours or until solid 11. To serve; if frozen solid, let stand at room temperature to soften; 1 hour.
