Angus Barn Stuffed Potatoes |

Ingredients:
4 stick(s) butter |
cheddar cheese, grated (optional) |
4 cup(s) grated parmesan |
16-24 large whole red bliss potatoes, baked |
4 cup(s) real bacon bits (bacon cooked until crisp and crumbled) |
1/4 cup(s) salt (to taste) |
1/2 cup(s) snipped chives |
1 quart(s) sour cream |
1/4 cup(s) white pepper (to taste) |
Directions:
1. Heat oven to 350 degrees. 2. In a large bowl, mash the potatoes with the skin on with the butter. Add all of the other ingredients. Spray individual ramekins or a large casserole dish with cooking spray. Transfer potato mixture to ramekins or casserole. If desired, sprinkle top with grated cheddar. 3. Bake about 20 minutes (or longer if using a large casserole dish) until thoroughly heated and lightly browned. |
