These are the Italian cookies everyone sees on holiday trays and on tables at Italian weddings. Spongy, citrusy, addictive. Ingredients:
5 cups all purpose flour |
1 cup granulated sugar |
5 teaspoons baking powder |
1 cup vegetable oil |
1 cup milk |
pinch of salt |
2 teaspoons fresh lemon juice |
2 eggs |
frosting |
3 cups sifted confectioner’s sugar |
4 tablespoons melted butter |
6 tablespoons orange juice |
2 teaspoons fresh lemon juice |
2 1/2 teaspoons pure vanilla extract |
rainbow sprinkles |
Directions:
1. Preheat oven to 350. 2. In large bowl, mix together the flour, sugar, baking powder, oil, milk, salt, 2 teaspoons lemon juice and eggs. 3. Roll dough into balls (to make 36) and place on cookie sheets coated with nonstick spray. 4. Bake for about 15 minutes, until set but not brown. 5. Meanwhile, in another large bowl, mix together the frosting ingredients until mixture is smooth and all lumps are gone. 6. Dip tops of cooled cookie balls in frosting, then sprinkle with the holiday or rainbow sprinkles. |
