I made up this recipe after a coworker signed me up for a chili cook off. This concoction took home most original & best in show , so I guess I owe her one! It is slightly spicy with a sweet hint to it... Ingredients:
1 onion, diced |
2 cloves garlic, minced |
1 lb beef |
1 lb hot pork sausage |
1 can (14 oz) kidney beans |
1 can tomato paste |
1 can diced tomatoes |
2 cans tomatoe sauce |
3 tbs molasses |
1 tbs cinnamon |
2 cans beef broth |
1/3 cup chili powder |
2 tbs cumin |
1 tbs cayenne |
2 bay leaves |
2 tbs oregano |
2 tbs red wine vinegar |
1 can diced chiles |
1 tbs nutmeg |
3 tbs crushed red peppers |
2 tbs butter |
Directions:
1. Add butter, garlic & onions in a large pot & cook until onions are opaque. 2. Add beef & sausage until cooked thoroughly & stir in tomato paste. 3. Mix in all spices & diced chile peppers, molasses, bay leaves & vinegar. 4. Add in tomato sauce & beef broth. 5. Let cook - stirring occassionally. The longer it simmers the better the flavor. |
