Angels Corner Georgian Shrimp

LOTS of spicy flavor in these skewered grilled shrimp from Angel's Corner in Pittsburgh.
Ingredients:
1 c. smooth peanut butter
2 t. peanut oil
1/2 t. curry powder
1 t. cumin seeds
1/4 t. red pepper flakes
1 t. fresh parsley, chopped
1/4 c. dry roasted peanuts
dash of salt
1/4 t. tabasco
12 medium-sized shrimp, peeled, deveined, butterflied
3 green onions, cut into thin strips
Directions:
1. Make peanut butter glaze by combine the first 6 ingredients in a medium-sized bowl; stir until well-blended. Set aside.
2. In a skillet, brown the peanuts over medium heat; add the salt and Tabasco. Set aside.
3. Place the shrimp onto skewers so that they fit snugly. Grush the glaze onto the shrimp and broil for 1-2 minutes; turn over, and brush on more glaze. Grill until cooked through, daubing on more glaze, if desired. Serve garnished with the peanuts and green onions.
