LOTS of spicy flavor in these skewered grilled shrimp from Angel's Corner in Pittsburgh. Ingredients:
1 c. smooth peanut butter |
2 t. peanut oil |
1/2 t. curry powder |
1 t. cumin seeds |
1/4 t. red pepper flakes |
1 t. fresh parsley, chopped |
1/4 c. dry roasted peanuts |
dash of salt |
1/4 t. tabasco |
12 medium-sized shrimp, peeled, deveined, butterflied |
3 green onions, cut into thin strips |
Directions:
1. Make peanut butter glaze by combine the first 6 ingredients in a medium-sized bowl; stir until well-blended. Set aside. 2. In a skillet, brown the peanuts over medium heat; add the salt and Tabasco. Set aside. 3. Place the shrimp onto skewers so that they fit snugly. Grush the glaze onto the shrimp and broil for 1-2 minutes; turn over, and brush on more glaze. Grill until cooked through, daubing on more glaze, if desired. Serve garnished with the peanuts and green onions. |
