This is my great grandmother's chicken soup recipe. This was born out of necessity - raising six children during the depression, love of cooking, and love of the soul. This has been passed down through four generations, and I lovingly pass it along to you as well. Read more . A favorite with kids due to the small pastina pasta. Ingredients:
4 cups chicken broth |
2 boneless chicken thighs |
1/2 cup pastina, uncooked |
1 carrot, quartered and chopped finely |
1 stalk of celery, quartered and chopped finely |
salt and pepper are optional - usually the stock has all of the herbs |
Directions:
1. Cook the chicken and vegeatbles in the chicken broth, covered and over low heat, until the chicken easily falls apart. 2. Add the pastina, stirring frequently while pulling the chicken apart with a fork or metal spoon. 3. Serve when pastina is tender, about ten minutes. 4. Serve with warm bread from the oven. 5.
