Nothing beats a good bowl of potato salad. Great for picnics and barbeques. Ingredients:
6-8 medium red potatoes-peeled or unpeeled |
2 eggs |
1/2 cup chopped celery |
1/2 cup finely chopped onion |
1/2 cup chopped sweet pickles |
2/3 cup mayonnaise-or to taste |
1 tablespoon yellow mustard-or to taste |
1 teaspoon salt |
1 teaspoon black pepper |
1/2 teaspoon garlic powder |
1 tablespoon paprika |
Directions:
1. Wash potatoes and cut into bite size peices. 2. Place in large dutch oven and cover with cold water. 3. Carefully place eggs on top of potatoes. Make sure water covers them. Bring to a boil then simmer for 15 minutes or until potatoes are fork tender. 4. Remove eggs,drain potatoes and rinse with cold water until cool enough to handle. 5. Peel eggs and chop finely. Set aside. 6. Transfer potatoes to a large mixing bowl 7. Add eggs,celery,onion,pickles,salt,pepper,and garlic powder. Toss gently to combine. 8. Mix mustard and mayonaise together and pour over potato mixture. Toss gently to coat. 9. Sprinkle paprika over the top. Do not stir. 10. Cover and refrigerate at least one hour before serving. |
