These fluffy pancakes are just about the only thing I'll get out of bed for on the weekend. Ingredients:
1 1/2 cup self rising flour |
2 tablespoons sugar |
1 1/2 cup milk |
2 large eggs |
3 tablespoons butter |
1 tablespoon oil |
2 teaspoons vanilla extract |
1/2 teaspoon cinnamon-or to taste |
Directions:
1. Preheat a griddle or a large non-stick skillet. When drops of water sizzle and bounce around on it, it is ready. 2. In a medium mixing bowl, combine flour, sugar, and cinnamon. set aside. 3. In a large mixing bowl, beat eggs and milk together with an electric mixer until mixture turns light yellow. 4. Add butter, oil, and vanilla. Beat until combined. 5. Add flour mixture. Beat on low until just combined and smooth. Do not overbeat. 6. Brush preheated griddle or skillet with additional butter or oil. 7. Pour batter onto griddle in 1/4 cup increments, leaving space between each cake. 8. Flip griddle cakes when edges look dry and tops are covered with bubbles. This should take approx. 2 minutes. 9. Cook on other side for approx. 1 1/2 to 2 minutes. 10. Repeat with remainder of batter. 11. Serve griddle cakes hot with lots of warm melted butter and syrup. 12. Note: 13. If you don't have self rising flour,simply add 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt to all purpose flour. Prepare as directed. 14. Suggestion: 15. Add bananas, blueberries, strawberries, or chocolate chips to pancake batter. |
