Angel Hair Pasta With Tomatoes and Basil |

From the Faster! I'm Starving! 100 dishes in 25 minutes or less cookbook by Kevin and Nancy Mills. Fresh and fast and yummy Ingredients:
1/2 small red onion (about 1/4 cup) |
1/2 cup fresh basil |
1 teaspoon crushed garlic |
1 (28 ounce) can ready cut tomatoes (drained**) |
2 tablespoons olive oil |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
16 ounces angel hair pasta |
grated parmesan cheese |
Directions:
1. Begin to boil water for pasta. 2. Peel and cut onion into 1/4 inch pieces. 3. Rinse basil and cut into thin strips. 4. Put onions and basil into a large bowl. 5. Add garlic, tomatoes, olive oil, salt and pepper. 6. Set mixture aside. 7. Cook pasta according to package. 8. Drain pasta and add to bowl. 9. Mix well. 10. **Can use 2 pounds of fresh tomatoes insted of canned. Tastes much better. 11. Drop tomatoes in boiling water for 30 sec then pull off skins. Cut tomatoes into 1/2 inch pieces. |
