Angel Hair Pasta With Tomato-Scallop Sauce |

Ingredients:
12 -16 ounces frozen seafood, shrimp & scallops |
2 tablespoons olive oil |
1 medium onion, chopped |
1 small bell pepper, chopped |
1 garlic clove, minced |
2 (16 ounce) cans diced tomatoes |
1 teaspoon oregano |
1 dash salt & pepper, to taste |
1 lb angel hair pasta, cooked & drained |
Directions:
1. In skillet, combine olive oil, onion, bell pepper & garlic. 2. Sauté over medium heat until veggies are tender. 3. Add tomatoes, oregano, salt & pepper. 4. Bring to a boil for 1 minute. 5. Reduce heat & simmer for 10 minutes. 6. Add Seafood & simmer another 3 minutes. 7. Serve warm sauce over pasta. 8. Top with parmesan cheese, if desired. |
