Using a pre-cooked rotisserie chicken from the grocery really speeds up the preparation of this recipe. I also use Buitoni brand basil pesto from the refrigerated section of the grocery by the cheese, yogurt, etc. I marinate the tomatoes (Caprese Salad Tomatoes (Italian Marinated Tomatoes), #55309) ahead of time and have them ready when I assemble the meal (the time needed for marinating the tomatoes is not included below).This dish looks really colorful and appetizing when plated. Ingredients:
2 ounces extra virgin olive oil |
1 tablespoon minced garlic |
12 ounces rotisserie chicken, pulled |
6 ounces basil pesto |
6 -8 ounces lemon juice, depending on how tart you like it |
2 ounces tomatoes, marinated and sliced or cut into cubes |
2 ounces yellow tomatoes, marinated and sliced or cut into cubes |
12 ounces angel hair pasta, cooked |
6 ounces goat cheese |
3 basil sprigs |
salt and pepper |
Directions:
1. Cook angel hair pasta as directed and keep warm. 2. Meanwhile, in a medium sauté pan, sauté the olive oil and garlic until aroma starts to form. Add chicken, pesto, lemon juice, red tomatoes and yellow tomatoes. Cook for approximately 3 minutes or until chicked is warm. Add heated angel hair pasta and check seasoning, adding salt and pepper if desired. 3. Place on three plates and garnish with goat cheese and basil. |
